The best Chardonnay grapes are carefully selected and hand-harvested in 15 kg crates at the first light of day, before the sun warms the pulp.

The grapes are pressed immediatelly after picking and fermented in stainless steel tanks at controlled temperature.

The wine is then refermented in the bottle, where it matures on the lees for 44 months.
